Oriental, NC

The electrical service that extends out to the dock was poorly designed and installed by the previous owner....so that needed to be rectified.  Just starting the process - Duane ordered a 250'  spool of large wire.  He and Ed will run this wire out to the dock to replace the existing wire and install better outlets for the boats to connect.  We've ordered everything for delivery so we still don't have to go out!



I searched the internet for "interesting fish recipes" and came up with a foil-packet meal idea.  Chopped veggies (potatoes, carrots, onions, green peppers, some corn, peas, green beans) and par-boiled them.  Sprinkled over butter and veggie base.


Added cherry tomatoes and topped with chunks of wahoo and lobster (Duane's packet got only wahoo, of course), sprinkled that with olive oil and Old Bay spice.


 Baked at 450 degrees for about 15 minutes.  Turned out lovely!


Simple dinner, was very good!   We played some cards for a couple of hours, fun!

  1. I'm sure Duane's electrical work will be up to snuff...nice to have salad stuff...we are all out...but I've placed an order with Food LIon...guess when it will be ready...next wednesday...haha...
